I found this recipe for Buttermilk Blueberry Breakfast Cake on Pintrest over the summer. My son is in love with blueberries so I had bought a huge container of them and was looking for something to do with them before they went bad. My parents were coming to town to visit and decided to give this recipe a shot for breakfast.

Tried it Tuesday- Buttermilk Blueberry Breakfast Cake
Lately I have not been very good with my time and have not done well in the meal planning department which means that I have not really tried any new recipes. I was looking back and realized I had tried this recipe over the summer before I began "Tried it Tuesday".
We all really enjoyed it. I will say that it was best the first day right out of the oven but the leftovers the next day were not too shabby. Unfortunately the recipe only needed 1/2 cup of buttermilk so I had a bunch left over. Yes I know you can "make" buttermilk unfortunately for me I discovered that after I had bought it. I ended up freezing the rest in 1/2 cup containers so I have plenty for the next time I make this recipe.

Tried it Tuesday- Buffalo Chicken
The latest new recipe I tried was another one I found browsing Pintrest. Surprise, surprise! It is also a crockpot recipe, another shocker, I know. This time I decided to make Buffalo Chicken a recipe that I re-pinned from this blog.
I didn't pay attention when I was at the store and the bag of chicken I bought was only 2lbs instead of 3lbs so I used less than the entire bottle of hot sauce. I have to say that this recipe was good. We ate it several ways. The first day we had it on a hogie roll with melted provolone cheese, the second I had it in a wrap for lunch with lettuce and ranch dressing, and the third was as a quesadilla. All were delicious! It was a little much for the kids but my husband and I sure liked it so I will definitely make this again.

Tried it Tuesday- Stuffed Peppers
I was going through my food board on Pintrest and stumbled upon a recipe for Quinoa Stuffed Peppers that I had pinned a while back. The recipe made quite a bit but I looked at it and realized it would be easy to cut in half so I decided to make them over the weekend.
The recipe said that they freeze well so I baked two of the peppers froze the other two to make on a later date. I also had plenty of filling left over which I plan to use in a quesadilla later this week for lunch. While I really liked this recipe my husband unfortunately did not. He said that they were ok but are not something he would want to eat again. That was so depressing to hear. I really liked them, but I guess since I have some in the freezer I can pull one out for myself on a day that he won't be home.

Tried it Tuesday- Chocolate Banana Muffins
Hailey always want pancakes for breakfast on the weekends but they are getting old, at least for me. I decided to make some muffins so she would still get to help mix and pour in the ingredients which made her happy. I had two bananas that I really needed to use up and remembered seeing a recipe for Chocolate Banana Muffins over at For the Love of Cooking. I find so many great recipes there.
Hailey and I mixed everything up and got them in to oven. She couldn't wait for them to come and cool down so she could try one. They were moist and delicious, Ryan and Hailey each ate an entire muffin.
I made a few changes to the original recipe. I used applesauce instead of oil and added a handful of chocolate chips because for some reason Hailey thinks they need to go in everything we bake.

Tried it Tuesday- Pumpkin Cupcakes
I have said before I love fall baking, there is nothing better than apples or in this case pumpkin. I am still trying to loose weight all though lately I have stalled out but I still wanted to bake something "healthy". I decided to try Pumpkin Cupcakes with a pumpkin spice cream cheese frosting. It is another great recipe from Gina over at Skinny Taste. To date I have not tried a recipe of hers that I did not like.
Hailey is really into baking so she was my little helper and since there is no egg in this recipe she got to lick the beaters after we were done. She told me the batter was good so I was sure she would like the cupcakes and I was right. They were a big hit and only 121 calories! I made mini cupcakes for the kids but they only wanted the big ones so I ended up eating the small ones,l so much for making special ones for the kids!

Tried it Tuesday- Crock pot Chicken Taco Chili
Yes I realize that the title of this post it "Tried it Tuesday" and it is currently Wednesday, but yesterday I ended up tied up all day without access to a computer so my post was delayed.
I have been trying to make at least one meal on the weekend that we can use as a leftover and decided to make Crock pot Chicken Taco Chili from Skinny Taste. Gina posts a ton of great recipes and I have yet to be disappointed with one of them. This was the second time I made this recipe. The first time I did it exactly like the recipe and it was yummy. This time I didn't have quite enough chicken so I used an extra can of beans. I did not notice a difference in taste or texture. This is definitely a recipe I will use over again especially in the winter months.

Tried it Tuesday- Strawberry Banana Chocolate Chip Muffins
A while back I was trying to figure out what to make the kids for breakfast on a Saturday morning. I had a few bananas I really needed to use up and some strawberries in the fridge, Then I remembered this recipe For Strawberry Banana Chocolate Chip Muffins from "For the Love of Cooking" and decided to give them a try.
I didn't have quite as many bananas ans strawberries as the recipe called for so I decide to only make half of the recipe. The only real change I made was to use whole wheat flour instead of all purpose. Hailey was excited to help me bake and measure out all the ingredients as well as place the liners in the muffin pan.She couldn't wait for them to come out of the oven so she could eat them

The verdict- the muffins were great. They turned out moist and delicious. Both kids gobbled up an entire muffin each so this recipe is definitely one to keep and make again.

I am still attempting to get back on task after being on vacation for the past week and a half. hopefully by next week things will be settled back into a routine and get back to blogging. in the mean time I have tons of photos to edit, laundry, cleaning, and getting my behind back to the gym.

Tried it Tuesday - Crock Pot Orange Chicken
I have posted before that I love my crockpot so I am always looking forward to trying new recipes in it. My husband only lets me use it on the weekends when I am home, he is paranoid that it is going to burn our house down. So I never get to come home to a finished meal during the week but I put it to good use on the weekends.
I love getting orange chicken from the local take out place so when I pinned this recipe I knew I had to give it a try. Labor Day this year was predicted to be rainy and cool which = no grilling. Since I was home all day and had had a taste for Chinese take out I decided it was a good day to give it a shot.
I read through all of the comments and decided to add some low sodium soy sauce and some ginger to the sauce. I served it with "fried" rice and broccoli.
The verdict was the sauce was good but the chicken was really dry. It definately did not take as long as the recipe indicated, closer to three hours. I think I may try it using chicken thighs or some other chicken with a bone in it so the meat is not so dry.

Tried It Tuesday
Lately I have been feeling like we eat the same things all of the time and yet I have managed to pin over 100 different recipes over on Pintrest not to mention the others that I have seen on food blogs that I have bookmarked. I decided to try one every week and have a weekly post along with it to highlight the recipe I tried. I will let you know how we liked it, if I would have done something different, ect. I know I love to have some feedback before trying a new recipe so hopefully this will help those of you that are hesitant to try something new. In the prococesshopefully I will expand my recipe collection so we can stop eating the same thing all of the time.
Last Thursday I was home with the kids, they were both sick so I decided to try something new and the Recipe Over at Skinny Taste looked like it was a good one to try. I have tried several fro this website and have loved them all. This one was for Chicken Rollatini Stuffed with Zucchini.
We didn't have any zucchini in the house but I had to run to the store form some Tylenol for the kids so I picked on up. Shawn was excited to try something new. I served them with twice baked potatoes and corn. they would have also been great with a salad and rice.
Everyone loved it and this will definitely be added into the mix of recipes for dinner.
